Kid rennet (Callu 'e crabittu)

It is the abomasum of the kid, filled with a semi-solid, acidic, very spicy paste, obtained from milk which is subjected to the action of yeasts and bacteria. The weight is approximately 250-700 gr.

Full Description:

Goat rennet, known depending on the area as "Caggittu de Crabittu" or "Cazu de Crabittu" or "Callu e Crapittu" and obtained exclusively from goat's milk, is a cream cheese with a slightly spicy flavour. It is the abomasum of the kid, filled with a semi-solid, acidic paste obtained from milk which is subjected to the action of yeasts and bacteria. The weight is approximately 400 g. In order for rennet to form, the kid must eat only breast milk. Immediately after slaughter, before the ferments act, the abomasum is emptied, the milk is filtered and put back into the kid's stomach pouch. The whole thing is closed with food string and left to dry in a dry and ventilated room.
