Zona di produzione: Comune di Monti (Gallura, Nord-Est Regione Sardegna),media collina a 300-350 mt sul livello del mare.Terreno di disfacimento granitico.Produzione: 65 q.li/ha.Epoca di raccolta: Fine settembre primi di ottobre, raccolta manuale.

Pressatura: diraspatura e successive pigiatura soffice.

Fermentazione: a temperatura controllata tra i 16-18°C.

Affinamento: In serbatoi d´acciaio per 3-4 mesi.

Imbottigliamento: In atmosfera d´azoto; tappo in sughero naturale.

Degustazione: giallo paglierino con riflessi verdognoli. Profumo ampio e complesso, con sentori floreali tipici della macchia Gallurese che scivolano in profumi di frutta esotica. Gli aromi confermano l´aspetto olfattivo dovesi presenta caldo, sapido, lungo ed elegante.

Abbinamenti: può essere abbinato sempre con successo con tutti i piatti della cucina marinara, si esalta con zuppa di pesce e brodetti, sublime con le zuppe di granseole e le grigliate di pesce. Si sposa bene anche con carni bianche e formaggi molli.Temperatura di servizio: 8-10°C.
